Mole poblano is one of Mexico's national dishes. It's a sauce that contains about 20 ingredients, including chili peppers and cacao. The serving will include either chicken or potatoes, and red rice.

Modern mole is a mixture of ingredients from North America, Europe and Africa, making it the first international dish created in the Americas. Its base, however, is indigenous. Nahuatl speakers had a preparation they called molli, meaning "sauce".

Spiciness/hotness: rather mild. For some people it can be even a little bit sweet for its cacao contents.
