The word "rajas" means "strips" but in Mexican cooking it refers to strips of chiles. The chiles are roasted, peeled, and cut into strips. This dish will be prepared with cream, onion, Philadelphia cheese and tender corn kernels, and served as a taco. Definitely gourmet food!

How hot/spicy will it be?

Mild, hopefully. It cannot be guaranteed that it will not be too hot, but normally the dish is NOT THAT SPICY as the chili veins and seeds are removed.

Besides that, there well be rice to eat along to allow for enjoyment of this meal.
