Pozole is a traditional pre-Columbian soup or stew from Mexico, and by antonomasia the dish to celebrate Mexican Independence Day on September 16th.

It's made from cacahuazintle maize, with pork meat. Seasonings and garnish: sour cream, lettuce, radish, oregano, lemon and tortilla chips.
