Read our update on collected help for Mexico.

A quesadilla is a tortilla filled with a mixture containing a main ingredient, and/or vegetables, (often) then folded in half to form a half-moon shape. This variation will be made with corn tortillas and potato and chorizo, all fried in canola oil.

Don't be deceived by the name: there are endless flame wars about whether a quesadilla must have cheese. This variation is from Central Mexico, so no, it doesn't have to contain melted cheese, but there's optionally shredded fresh cheese, sauce and lettuce as toppings.

Vegans: There will be an option to order the dish without meat (chorizo).
